As a mom of three boys, I feel like I’m constantly cooking and preparing food. I confess I dread the grocery list and shopping part, but thank goodness grocery pickup was created, so I spend less time at the grocery store!

One of the hardest parts of dinner prep is having a menu. Throughout my 8 years of being a mom, I have run out of ideas of what to cook each night. My family likes a variety of food, so I came up with a simple menu that allows flexibility in recipes as well as an easy answer to the constant question: “What should I make for dinner?”

Here is a list of the genres of food my family loves to eat:

I decided to take these “genre” food ideas and create a menu. Each night we have a theme for dinner. This way, when I know it’s Mexican night, I will be making tacos, fajitas, enchiladas…etc. It makes planning easier, as well as trying new recipes in a category so dinner doesn’t get boring.

When it’s Indian night, I make Coconut Curry, Chicken Tikka Masala or Red Curry (tomato based).

Taco Tuesday is the norm at our house, and it never gets old!

Whether its potato, chicken noodle or taco, soup is always a comfort food for our family.

On Thursday we enjoy lasagna, Alfredo or spaghetti.

Fridays are random, but we like Wingers Sticky Wraps or pizza.

My boys are starting to LOVE Asian food, but it’s a lot of work to make! Our current favorite is baked sweet and sour chicken with fried rice.
