Cheesy Chicken Taquitos

Ingredients

8 oz. cream cheese, softened

2 c. cooked and shredded chicken

2 c. grated cheese

1 ½ T. lime juice

2 tsp. chili powder

2 tsp. garlic powder

1 tsp. dehydrated onion (optional)

1 tsp. chili lime seasoning (optional)

¼ c. salsa, green or red (optional)

½ tsp. cumin (optional)

30-40 corn tortillas 

Garnishes: cilantro, green onions, salsa, sour cream, guacamole.

Instructions

Preheat the oven to 425 degrees. Mix all ingredients together except garnishes and tortillas. I usually only add the chili lime seasoning out of the optional ingredients but add whatever you know your family will like! Microwave four tortillas at a time between two damp paper towels for 30 seconds. Fill each one with 2-3 tablespoons of filling and roll tightly. Line a cookie sheet with foil and spray with cooking spray. Fill all tortillas and place seam side down on pan. Spray taquitos with more cooking spray and sprinkle lightly with salt. Bake for 15-20 minutes. Serve with whatever garnishes your family likes.

The Backstory

We have very picky eaters in my family (including myself) but everyone will eat these! I love to double the batch and freeze them for lunches and snacks. They freeze great if you let them cool and then put them in freezer bags. I like to make these for other families when I want to take them dinner and call it a “Dippy Dinner”. I send them with containers of sour cream and salsa, veggies and dip, and fruit and dip.
