Let’s kick off this Family Meals on a Budget – Breakfast series with some fun recipes that even kids will love. I have a fairly picky child, so some of these recipes are the go-to ones we use often. As always, feel free to make changes or add things to these recipes as well. We all have different tastes, so make them your own! 

Easy Breakfast Pizza 

Crescent dough sheets ($1.64+)

Eggs ($3.60, 18 count)

Country ragvy mix packet ($1.00, Pioneer brand) 

Preheat your oven to 350°. Begin by mixing the eggs in a bowl. Heat eggs in a non-stick pan over medium heat to make scrambled eggs. While that’s cooking, brown the sausage in another non-stick pan over medium heat. Grab sheet pans and roll out the crescent rolls so that they form one flat sheet on the pans. Once that’s done, make the gravy according to the package. Everything should now be ready to assemble. Top the crescent rolls with sausage then eggs. Sprinkle sausage and eggs with shredded cheese then add the gravy over the top. Pop the assembled pans into the oven until cooked through. This meal costs roughly $10-$20 and can feed a family of 5 easily.

Loaded Omelet

Your choice of toppings/sauce

First, prep all of the ingredients that need to be shopped. Begin the omelet by cracking the eggs into a bowl and whisking them together. Add the eggs to a greased pan so they don’t stick while cooking. When one side is mostly cooked, add the ingredients of choice to your omelet.  I personally do all of the above and my son devours it – with ketchup on top, of course. Once you have added your choice of ingredients, flip the empty side over so it is covering the middle. Let it cook for a few and then flip to the other side to let it finish cooking. I sometimes add a lid to my pan to help it. Once it’s cooked all the way through, serve with your choice of sauce. I personally put salsa, while my son/hubby use ketchup. This meal costs roughly $15-$20 depending on brand and how many eggs you use. 

Homemade Biscuits and Gravy 

Flour ($1.56)

Sugar ($2.12)

Baking powder ($1.36) 

Milk ($1.55 half gallon) 

Shortening or butter ($4.98, 48oz can)

Salt&Pepper ($1.84)

Sausage ($2.20)

Seasonings 

Preheat the oven to 350° while making the drop biscuits. For the biscuits, you will need 1 tbsp baking powder, 4-5 tbsp shortening or butter, 1 tsp salt, 1 tbsp sugar, 3 cups of flour and 1 cup of milk into a bowl. Begin by combining everything except the milk into a large so that the shortening is mixed in well with the dry ingredients. Add the milk and mix until well combined. Use an ice cream scoop to scoop the biscuit batter onto a greased sheet pan. Bake until golden brown.

While the biscuits are cooking, brown the sausage. Once the meat is cooked through, add some flour to the meat to create a rue for your gravy. Then slowly add in the milk (I never measure so I’m guessing about 3 cups of milk). Stir the meat/rue mix with the milk well and add in salt/pepper to make the tasty gravy. This will thicken up as it cooks and create that gravy we all know and love.

Make sure to keep checking on the biscuits, you don’t want them to overcook. Once everything is done, add your biscuits to a plate and add as much gravy as your heart desires. Enjoy your easy biscuits and gravy made from scratch! This meal costs roughly $16 if you need to grab all of the ingredients.

French Toast 

Loaf of bread ($.93+)

Vanilla ($1.26+)

Sugar/cinnamon mixture

Begin by whisking together the eggs, milk, vanilla, and sugar/cinnamon mixture in a large bowl. Butter a large pan and let it heat up to medium temperature. Soak one piece of bread at a time into the egg mixture and cook each side until golden. Once cooked, serve with syrup, jam, or other preferred toppings. This is a super quick and simple recipe to feed your family. It costs roughly $12 if you don’t have any of the ingredients at home and will easily feed a family of 3-4 with one loaf of bread.
