March 31 is National Tater Day!
Now, I’m not usually one to celebrate these random little holidays, but being an Idaho girl, I think it’s worth celebrating. I feel pretty qualified to talk about my love for potatoes. You see, my school mascot was a russet potato, I worked at a warehouse for four summers sorting potatoes, my mom drives a truck during spud harvest every year, and my dad is a potato salesman. My town celebrates Spud Day every September where we do a tug of war competition over a pit of mashed potatoes brought in with a cement truck. I’m like an extreme when it comes to a typical Idaho girl.
But man, potatoes are awesome!
Did you know that potatoes are the number one consumed vegetable in the United States?! Makes sense because you can do so many things with them! Potatoes are so versatile. You can have them mashed, fried, baked, boiled. There are fries, soups, chips, hash browns, tater tots, and salad all made with potatoes. They work great as side dishes and can also become the main dish when adding things to them. Hello, twice-baked potatoes!

I’m pretty sure all of our kids love potatoes, so this is one of those random holidays that we can celebrate pretty easily. Have them get involved with making potatoes in the way that they like best. My 3 year old loves mashed potatoes, so I’ll probably be making some with his help.
